It is the original, decades-old physiological model for how carbohydrate-containing foods affect blood glucose, and it remains one of the most replicated findings in nutrition science.
What the Glycemic Index Actually Measures
The glycemic index was first developed by Dr. David Jenkins and colleagues, who measured the postprandial blood glucose response to a standardized portion of carbohydrate from different foods, compared against a reference food.1 A low-glycemic-index food raises blood glucose slowly and moderately. A high-glycemic-index food raises it quickly and sharply. The distinction matters because postprandial glucose spikes, not just fasting glucose or long-term averages, may account for as much as 70% of a person's total daytime hyperglycemia.2
What the Research Shows
A large systematic review and meta-analysis covering 54 randomized controlled trials found that low-glycemic-index diets were effective at reducing hemoglobin A1c, fasting glucose, BMI, and LDL cholesterol compared with other diet types in people with impaired glucose tolerance or diabetes.3 A separate meta-analysis of 24 studies involving over 2,000 participants found that low-glycemic-index diets outperformed high-glycemic-index and other comparison diets specifically on fasting blood glucose and A1c control, with the strongest effects seen in interventions lasting four weeks or longer.4
Mechanistically, low-glycemic-index foods slow the rate at which glucose enters the bloodstream, which produces a smaller, more sustained insulin release rather than a sharp spike-and-crash pattern, flattening both the glucose and insulin curves after a meal.5

Why This Matters for CGM Coaching Specifically
A CGM makes the glycemic index tangible in a way a textbook chart never could. A client can watch, in real time, how a lentil-based lunch produces a flatter curve than a refined-carbohydrate lunch of similar calorie count. That direct feedback loop is what makes low-glycemic-index coaching effective: the client is not taking the coach's word for it, they are watching their own data confirm the pattern.
